Homemade Flour Tortillas

If quesadillas and burritos are on the dinner menu, why not try using homemade tortillas? One of the best parts of going out to eat at a Mexican restaurant are the fresh and warm tortillas. Now we can get that authentic taste at home (store bought that has sat in the freezer for a month is never as good). I stumbled across a great recipe for making them and I am so excited to share it! One word – yum.

super easy pad thai recipe

I just went out to a new Asian fusion restaurant that had the absolute most amazing pad thai I’ve ever eaten. We went for lunch to try the place out and were assuming they would have “lunch menu” pricing… but nope. Ended up paying $12.95 for pad thai at lunch time. Highway robbery!

But actually, it truly was the best I’d ever had LOL. So, I’ll be back. It got me thinking about making this dish at home too and I jumped online to find a good recipe to test out. I stumbled on the Brownies For Dinner blog and will be trying their easy pad thai recipe asap!

Here’s the link to the recipe if you’d like to try it too…

baked taco ring recipe

This recipe looks so good. It’s totally unique too. I don’t think I have ever had anything quite like this. Have you ever baked a taco? The closest recipe I can think of is enchiladas but this is totally different.

I definitely want to try this as an alternative to pizza night. I am getting a bit burned out on the homemade pizza gig and this could be a very welcome change up.

Avocado Egg Rolls with Creamy Cilantro Ranch Dip

We recently went out for sushi and it was just so good. The bits of avocado, fish and rice just got me thinking that I need to find a recipe when we get home to make some of this yumminess for myself.

Some quick searching brought me to this blog called I Wash You Dry! Shawn has an incredible recipe for egg rolls that sound even better than homemade sushi to me so I am gonna go with it. I think it’s the dip that won me over. Cilantro ranch dip… I think I’ll try adding some wasabi for extra kick!

easy stovetop garlic naan bread recipe

My absolute favorite ethnic food of all time is Indian! However, since the new town we recently moved to is quite small and has only one Indian restaurant that is really not something to write home about I have been moving towards Thai food as my new number one. But Indian will always have a special place in my heart LOL.

One of the items that makes Indian meals so amazing is the delicious Naan bread. So, when I saw this great recipe for stovetop naan bread I just had to share it with you.

slow cooker chinese fried rice

Here’s a recipe for chinese fried rice I really think you’ll enjoy. You don’t actually cook the rice in the slow cooker but you do cook the egg and all the veggies. This is perfect for when you have leftovers like chicken and hamburger.

Take those already cooked meats and toss them into the pot and they’ll blend really nicely with this recipe. Do you remember the post I did about the girl who used her slow cooker every day for a year? This is one of her recipes!

mexicali hamburger casserole recipe

Mexico meets California in this delicious dish! It’s called mexicali hamburger casserole. Found this over at the BHG site and just had to share it with you. I love mexican dishes because they are usually pretty low in carbs and heavy on the protein.

You just have to make sure you don’t over do it on the cheese and use black beans instead of re-fried beans whenever possible to easily cut the calories.

super easy pad thai recipe

I can not tell you how much I love good thai food! So, I was pretty excited when I cam across a “super easy” pad thai recipe over at the Quick-Dish blog.

In fact, it’s about 4pm as I write this. There is still time to run to the grocery store and pick up a couple of these ingredients I don’t have yet and be home before anyone is the wiser. It’s Thai food at our house tonight!

super simple teriyaki chicken recipe

When you go to a Japanese hibachi style restaurant where they slice and dice and cook your food right in front of you… one of the main dishes is always teriyaki chicken. Now, how is it that they can whip up amazingly delicious teriyaki chicken in just a few minutes but we can’t duplicate it at home?! Trust me, I have tried and it always turns out not quite right.

Well, I found this super simple recipe that did the trick! You have to try this yourself. Make sure to check the comments for more specifics on the recipe.
