It’s a new year and it’s the time to start experimenting with foods you would normally never eat in an attempt to lose a few pounds LOL. If you are looking for a breakfast recipe that has no processed ingredients you might like this. Fair warning… it does not taste like pancakes and may take some getting used to but if you want to cut out the processed ingredients this is a must try.

gluten free lemon cake

Here’s a recipe for gluten free lemon layer cake that looks really yummy. What I like about this recipe is that it’s ok to make it ahead of time, up to one day early. It’s actually recommended to make the layers first and let them cool down and set for a day and then go ahead and frost everything out about 4 hours before it will be served to allow it all to come to room temperature.

I love all kinds of lemon based desserts, so this is one I will definitely be putting in the recipe folder.
