Meatloaf just sounds disgusting. It’s a loaf of meat. Yuck. But really it is very good. It makes me think of home. We had it all the time while I was growing up. My mom makes the best meatloaf and I will only eat hers (or the one that I make). This recipe from BBQ Pit Boys puts a spin on traditional meatloaf that will have even it’s most passionate of haters asking for seconds.
Talk about delicious. And a bit of work. The meat has be formed into a sheet that can be rolled and that will take some kneading and pounding. (p.s. – I love that he wets his cutting board down with beer!) Once rolled, season the inside with all kinds of deliciousness. Sprinkle with onions, celery, bacon, and cheese. Then carefully form the whole thing into a roll. Carefully! Yum.
