We just made chicken enchilladas for my family as they were visiting for a quick weekend trip to see their grand kids. We have never followed a recipe for enchilladas as they are pretty straight forward. We started using cream cheese mixed with sour cream for the filling and that has greatly improved the overall texture and taste.
I recently stumbled on this recipe from Paula Dean which is very close to how we make them and I am going to use some of her tips to see if we can step them up a notch.
