I was browsing one of my favorite blogs called Mel’s Kitchen Cafe and came across this recipe for crispy southwest chicken wraps. This is the perfect lunch time meal for me. High in protein and lower in the carbs department by being made with a wrap instead of bread.
Since I would have these for lunch, I would probably prepare most of the ingredients ahead of time, especially the rice and then put it in the fridge in a tupper ware container. Then, when I am ready to make… just add cheese to my mix and grill it.
