I know I post a lot of dessert recipes here on the blog but I actually do try and eat healthy most days of the week. Here’s a great light way to get some extra veggies into your weekly dinner ideas. Try an asian cucumber salad! Even better this recipe is “spicy” so I like it even more now.
Feel free to leave out the chili peppers if you want a milder version. This is a great side dish in the summer time but since cucumbers are available at the store year round you can really make this any time.
